AUGUST DELIGHT: ORADIN FILLET WITH CREAMY LEMON SAUCE

Delicious Hvar orade with lemon sauce and Domaine des Homs organic Chardonnay - this is what we call an August delight. In cooperation with Hvar King of Adriatics, we have prepared a refreshing recipe for a summer lunch or dinner for 4 people.

COMPOSITIONS

For 4 people                             

4 fillets of skinless and boneless orade

50 g unsalted butter

65 ml creme fraiche

1 - 2 garlic cloves, finely chopped

1 tablespoon mustard

1 ½ tablespoons lemon juice

salt and pepper

1 ½ tablespoons shallots, finely chopped

fresh parsley and lemon slices (for serving)

PROCEDURE  

STEP 1

Preheat the oven to 200 °C. Lightly salt and pepper the fish fillets on both sides and place them on a baking tray. Leave some space between them.

STEP 2

Place the butter, cream, garlic, mustard, lemon juice, salt and pepper in a microwave-safe jug or bowl. Heat in the microwave for 2 x 30 seconds, stirring in between, until the butter has melted and the sauce is smooth.

STEP 3

Sprinkle the shallots over the fish and pour the sauce over the fish.

Bake for 10 to 15 minutes or until the fish is cooked. Remove from the oven and transfer the fish fillets to plates. Pour a little sauce over them and garnish with parsley and lemon slices, if desired. Serve with steamed rice.
