Ta cuvée je prva penina v Sloveniji z več kot 50% vina iz rezerve v mešanici, da ohrani svoj edinstveni karakter iz leta v leto.

Penino Brut Réserve so ustvarili s strogim upoštevanjem tradicionalne šampanjske metode. Znanje vinarja, ki je v preteklosti delal v velikih kleteh francoske Šampanje, je omogočilo, da so kot prvi v Sloveniji oblikovali edinstven stil vina z uporabo vina iz rezerve.
Odlična kombinacija modrega pinota, chardonnaya in endemične slovenske sorte žametna črnina iz leta v leto razkriva nežno identiteto dolenjskega terroirja. Predvsem pa je penina Brut Réserve vino, ki popolno združuje moč, prefinjenost in eleganco, ki so temelji stila kleti Domaine Slapšak.
V nosu se začutijo arome agrumov in zrelih hrušk, za kar poskrbi chardonnay.

V ustih je napad neposreden in natančen, sledi pa mu jasna svežina. Nato začutimo prostornino in gladkost modrega pinota. Zaključek je kompleksen in eleganten, za kar se je zahvaliti vinu iz rezerve.
Penina Brut Réserveje idealna za aperitiv. Popolno se ujema tudi s carpacciom jakobovih pokrovač, piščancem s tartufi in smetano, štruklji s skuto ali ovčjim sirom.

Domaine Slapšak

Building on the solid foundations laid by Martin and Tanja, the young generation is now writing new chapters in the Slapšak story. Combining French approaches and Slovenian traditions to create their wines, they have created the Domaine Slapšak brand. The partner of Urška's daughter, François Botton, originally from Champagne, France, is a winemaker by training and an expert in the production of traditional method sparkling wines. He trained at the University of Reims in Champagne and later worked for prestigious Champagne houses such as Roederer. He has worked as a consultant oenologist in Champagne and Alsace, and since 2006 has been advising major wineries around the world. He and his brothers-in-law, Andrej and Matej, quickly got down to work. They planted additional vineyards with pinot noir and chardonnay, and started producing sparkling wines. Matej takes care of the technical side, while Andrej is fully committed to working on the estate and developing the young company.
