IS PORT JUST PORT WINE? #INTERNATIONALPORTDAY

Is Port just a wine from Porto? Some may think that it is a drink for experienced drinkers, that it does not appeal to young people, but let's be honest, Port can be the ideal accompaniment for a variety of occasions. We often think of port when a chocolate dessert is on our tables, or a plate of aged cheeses.

BUT WHAT STYLE?

White or red? You could also ask sweet or less sweet ???? Yes, there are many styles, but they are all linked by an interesting production process. Port is a special, fortified wine. In fact, a distillate of 77 vol. % of alcohol is added to the must to stop the alcoholic fermentation. Port is a sweet wine and the level of residual sugar depends on when the distillate is added - if the distillate is added shortly after the must is made, the sugar will be higher and vice versa, if the must has started to ferment, the sugar will be lower.

PORT AND FOOD - COMBINATIONS FOR GOURMETS

Have you ever tasted a white port? It is a newer category, and certainly suitable for a variety of occasions.

In our wine shop you will find Extra dry port, which can also be accompanied by a variety of cold cuts. Smoked or cured meats with more intense aromas will go well with the dried fruit and honey notes, while the saltiness of the meats will be balanced by the softness and sweetness of the port. In the same way, it will go well with the cheese from Tolmin. Try it, we are sure you will be surprised by the combination. Would you like to enjoy it while watching your favourite series? Port and main course? Of course! Especially if you prepare a roast or venison dish, accompanied by caramelised beetroot, Jerusalem artichokes and a reduction made from the venison juice and a piece of port, which you serve alongside the dish. In this case LBV (Late bottled vintage 2015), or vintage port 2016 an exceptional accompaniment. This style has a rather vinous behaviour, with an interplay of fruit and spice aromas to accompany the earthy aromas of the food, higher alcohol to accompany the juiciness, and the tannin, which is not negligible in these styles, to make its contribution.

10-years old white port denotes a port whose average ageing period for all the wines of which it is composed is 10 years. It is a subtle expression with aromas of dried apricots, honey blossom, orange marmalade and ginger. This will go extremely well with a cheesecake, or a Pavlova, which we have garnished with poached white and yellow fruit.

A SPECIAL DESSERT FOR PASSIONATE COCKTAIL LOVERS

Porto-Negroni

You need an "old-fashioned" glass, chilled with ice cubes while stirring with a cocktail spoon. Pour off the excess water. Pour all the ingredients into the glass and stir with a spoon. Squeeze the aromatic oil from the orange peel and place it in the glass.

Red Velvet

Pour the port into the champagne glass (flute) and the chilled cremant over it. Stir and garnish with a hibiscus flower or a cherry.

Porto Spritz

Place a few ice cubes in an old-fashioned glass and stir with a cocktail spoon to chill. Drain off excess water. Pour the Extra Dry White Port, Aperol and soda water over the ice. Stir it all together with a cocktail spoon and garnish with a slice of BIO orange.
