Penina Blanc de Blancs je nastala iz želje, da bi prikazali poln izraz chardonnaya s terroirja Dolenjske: ena sorta, chardonnay, z enega terroirja, vinograda Pesce.

Ta plemenita sorta tudi kot goba posrka vse, kar mu daje terroir, na katerem raste. Vse grozdje za penino Blanc de Blancs prihaja samo iz vinograda Pesce, kjer chardonnay raste na flišni podlagi. Ta sedimentna kamnina, v kateri se izmenjujeta peščenjak in s kalcijem bogat lapor, je zelo drobljiva in zato kot nalašč za trse, ki korenine poženejo globoko. To daje chardonnayu edinstveno moč in stil, ki se izrazi postopno v 40 mesecih počivanja na drožeh.

V nosu na začetku prevladujejo glog, agrumi in zrel ananas. Ko se vino ogreje v kozarcu, chardonnay penine Blanc de Blancs nežno razvije vso svojo polnost in kompleksnost. Domaine Slapšak

Building on the solid foundations laid by Martin and Tanja, the young generation is now writing new chapters in the Slapšak story. Combining French approaches and Slovenian traditions to create their wines, they have created the Domaine Slapšak brand. The partner of Urška's daughter, François Botton, originally from Champagne, France, is a winemaker by training and an expert in the production of traditional method sparkling wines. He trained at the University of Reims in Champagne and later worked for prestigious Champagne houses such as Roederer. He has worked as a consultant oenologist in Champagne and Alsace, and since 2006 has been advising major wineries around the world. He and his brothers-in-law, Andrej and Matej, quickly got down to work. They planted additional vineyards with pinot noir and chardonnay, and started producing sparkling wines. Matej takes care of the technical side, while Andrej is fully committed to working on the estate and developing the young company.
