Miguel Merino Blanco is made from grapes sourced from two special vineyards: La Loma (planted in 1946) and Mingortiz (planted in 1977). The La Loma vineyard (1.4 hectares at 534 metres above sea level), along with tempranillo and garnacha, hides a real little treasure - a few vines of garnacha blanco, which give the wine floral aromas, complexity, body and depth. Mingortiz is a vineyard of 0,74 hectares in the eastern position, with only the highest parts of the viura (about 0,20 hectares). The soil here is shallow, with a lot of drainage, and is made up of limestone and clay. The location of the vineyard, the salinity and the soil are ideal for producing fresh and mineral wines from viura.
The grapes were hand-picked early in the morning and transported to the cellar in small crates. There, they were sorted and only the best and healthiest grapes were used to make wine, followed by a 24-hour sedimentation of the must, which was then transferred to 4 500 litre French wood barrels for alcoholic fermentation. The fermentation was followed by a 10-month maturation period in 500 litre barrels before the final typing of the wine.
