Flavours are accentuated. There are almonds, dried apricots and tropical fruits, as well as candied orange and dried figs. On the finish, we also detect sweet spices and dried Mediterranean herbs.

The taste is warm, soft and sweet. It has a generous measure of freshness, with well-integrated notes of wood. It is a port with an intense flavour, full body and a long-lasting taste.

MANOELLA 10-YEARS OLD WHITE PORT
It is a type of white Port wine from old vineyards at high altitudes. These are vineyards with mixed plantings of grape varieties that are harvested at the same time. The wines are Viosinho, Rabigato, Códega do Larinho and Gouveio. Fermentation of the wine began in granite lagares after foot-rotation. After this, wine distillate was added to the mash to stop the alcoholic fermentation. The wine was then matured for about 10 years in second-hand 630 litre wooden barrels in the Quinta da Manoella lodge.

The property is located in Vale do Pinhao and is one of the historic properties that have been in the family for 5 generations. All the wines are produced by Sandra and Jorge Serodio Borges and are very characterful, elegant and pure.

Wine & Soul se nahaja v osrčju doline reke Douro, najbolj znane portugalske vinske dežele in obsega več slikovitih vinogradov. To inovativno, a rustikalno vinsko klet sta 2001 ustanovila Jorge Serôdio Borges in njegova žena Sandra Tavares da Silva, ki sta želela svoje bogate izkušnje prenesti v vinsko klet, ki bi na mednarodni ravni predstavila tradicionalne sorte in terroir doline Douro. Lokacije vinogradov Sprva je Wine & Soul obsegal samoten vinograd Pintas, ki se nahaja v dolini Pinhão v Cima Corgo. Skozi leta pa sta svojo posest razširila na nove lokacije, kot je veličastna Quinta da Manoella. Parcele z več kot 80 let starimi vinogradi, se nahajajo na terasah, ki so jih pred stoletjem oblikovali z dinamitom. Zidovi, zgrajeni iz skrilavca ščitijo trto, preprečujejo erozijo in krepijo to idilično pokrajino. Filozofija vinarstva Wine & Soul številni svetovni kritiki čislajo zaradi svojih karakternih vin, ki vsa predstavljajo izjemen terroir dežele Douro. Prednost dajejo naravnemu kmetovanju brez rabe kemičnih gnojil, pesticidov ali herbicidov. Namakanje je minimalno in se izvaja le ročno, za skoraj vso fermentacijo pa se uporabljajo avtohtone kvasovke. Zaradi strmih pobočij in ozke širine teras vse grozdje obirajo ročno. Grozdje drozgajo na stari način, s stopali v granitnih lagares. Zaradi nežnosti postopka so tanini fini, svilnati. Vsa vina so starana v francoskih barikih, ali tradicionalnih sodih iz portugalskega oreha. Jorge Serôdio Borges in Sandra Tavares da Silva, lastnika/vinarja mož in žena, ki stojita za Wine & Soul, imata dolgo zgodovino vinarstva. Pred tem je bil Jorge Serôdio Borges enolog v Niepoortu. Zdaj je poleg lastništva Wine & Soul lastnik kleti Passadouro z družino Bohrmann. Sandra Tavares da Silva pa velja za prvo žensko vinarko v Douru. Izkušnje je pridobivala v Quinta do Vale D. Maria v Douru in na posestvu svoje družine Chocapalha v Estremaduri.
