Pridelano iz avtohtone sorte savagnin, po principih, ki nasprotujejo najosnovnejšim enološkim zakonitostim: 6 let in 3 mesece zori v nepolnih hrastovih sodih, brez ouillage (dolivanja). S tem se na njegovi površini razvije tanka plast flora, ki vinu doda izdaten karakter in aromo. Vino nato ustekleničijo v steklenico posebne oblike in volumna, ki jo imenujejo Clavelin. S svojimi 62 cl ponazarja, koliko vina je skozi dolgo dozorevanje ostalo iz osnovnega litra vina.

Vin Jaune rightly prides itself as one of the wines with the longest-lasting flavours and exceptional ageing potential, which can reach 100 years or more. The oldest vintage of this style sold in 2018 was 1744.

The wine has an oily texture, with a golden-yellow colour. The bouquet is intense and reminiscent of green walnut, roasted almonds and hazelnuts, yeast, dried apple and apricot, also pineapple segments, honey, candied citrus, aniseed, champignons, while offering notes of smoke and salt. On the palate it has an intense, lively freshness and saltiness that lingers and lingers. Aromas of overripe and dried fruit, champignons, smoke, candied citrus and salt are repeated. An elegant wine that can easily be enjoyed on its own or accompanied by dishes of freshwater fish, poultry, pheasant, pigeon, Asian or Oriental cuisine.

Domaine Rolet

Domaine Rolet is considered one of the leading wine houses in the Jura region of France. Their mission is to offer wines that reflect the richness of the terroir through unique wine varieties found only here. Thus, their varietal composition consists of white Savagnin (the prestigious variety used to produce the oxidative Vin Jaune) and Chardonnay (the most planted variety in the Jura), and among the reds, Trosseau, Poulsard and Blue Pinot. The estate is the fruit of the efforts of three families with a rich tradition of viticulture, catering and entrepreneurship; the Devillards (a Burgundian family of vignerons, 5th generation and owners of the Château de Chamirey in Mercurey, the Domaine des Perdrix in the Côte de Nuits, the Domaine de la Ferté in Givry and the Domaine de la Garenne in Mâconnais), the Flamberts (several generations of hoteliers) and the Dupuis (entrepreneurs). Domaine Rolet is famous for its red varietal wines, for which they have established themselves as true pioneers. This is one of the reasons why they are respected by connoisseurs, connoisseurs and renowned wine critics worldwide and at home. Respect earned through strict care of the vineyards, low vine pressure and harvesting of optimally ripe grapes. They currently cultivate 65 hectares of vineyards, of which 40 are located in Arbois, 23 in Côtes du Jura, 2.43 in the prestigious l'Etoile appellation and 32 acres in Château-Chalon. The vineyards are farmed according to low-intervention principles, and several of them are also undergoing organic certification. The average age of their vines is a respectable 45 years.
