The wine is golden yellow in colour and thick in texture.
Intenzivnih arom, kjer zaznamo predvsem mineralnost, ki izvira iz apnenčastih tal. Sledijo sadne zaznave po breskvi (tipičnost sorte Bical), cistrusih, notah sladkih začimb z vaniljo, sladkim korenom in oreških (lešniki, mandeljni, pinjole). S časom zaznamo tudi note timijana in medu.
V ustih deluje oljnato, mehko s poudarjeno mineralnostjo in svežino, ki je tipična za Atlantsko klimo. Vino širine in kompleksnosti z dolgim in zelo obstojnim, preciznim okusom kjer se ponovijo zaznave zrelega sadja, medu, sladkih začimb in zelišč. Na voljo v zelo omejeni količini. Napolnjenih je bilo zgolj 212 magnum steklenic!

The wines of Filipa Pato and William Wouters are the result of a magical collaboration between husband and wife. Their philosophy is simple: to create authentic wines without make-up that reflect the true nature of the vineyards from which they come. They make their wines exclusively from indigenous varieties. Baga, Bical, Arinto, Cercial and Maria Gomes are the varieties that create wines with soul and character. The composition of the soil, the microclimatic factors and the unique locations are the ideal conditions for producing excellent grapes according to biodynamic principles. The winery treats the grapes gently, with minimal intervention and strict monitoring of the wine, allowing the variety to express itself fully. The wines of Filipa Pato & William Wouters are the ultimate expression of the 'terroir' that results from the fusion of knowledge, art and nature. Wines produced in this way are said to be 'without make-up' - each one with its own distinct character. Filipa Pato is a renowned winegrower in Bairrada. A graduate of the University of Coimbra as a chemical engineer, she honed her viticultural skills in Bordeaux, France, Mendoza, Argentina and Margaret River, Australia, and with her father, Luis Pato, a Baga rebel. William Wouters is a chef, sommelier and restaurateur. He comes from a catering family from Antwerp, Belgium. He is a champion sommelier and former head chef of the Belgian national football team at the World Cup in Brazil and the European Cup in France. Together, Philippe and William share all their experiences: their love of food and wine, their encounters with great wine growers, sommeliers and wine lovers from all over the world, and the magical, inexhaustible culture of the world of wine. Today, for Filipa and William, Ois do Bairro is the centre of their wine universe. They are happy to share with guests all their passion for food and wine and their philosophy: drink and eat locally and think globally.
